Veggie "fried" quinoa

Good morning everyone. I don’t know about you but around me there was a doozy of a storm last night (seriously they’re delaying or cancelling local schools because so many streets are flooded). It doesn’t look like its going to stop anytime soon either šŸ˜¦

I mentioned yesterday that I’ve been eating the same veggie quinoa for lunch/dinner all week. What can I say, my Tuesday/Wednesday’s are always crazy busy/long so making a large batch of something on Monday is the way to go. I portion my leftovers into jars and then it’s like having takeout ready to go for the next few days.

This is a lightened version of takeout fried rice. With the extra veggies and the quinoa in place of the rice it is a healthy and filling dish, with a clean, fresh flavor.Ā

Ā Best part? Like just about everything else I make this is quick, easy and totally customizable to your personal tastes (or what you have on hand). Let’s get cooking!

Veggie “fried” quinoa
Serves four
20 minutes (includes veggie prep)
2 cups cooked quinoa
1 red bell pepper, seeded and diced
3 large carrots, cut into matchsticks (or a cup of the matchstick carrots you but in stores)
3/4 cup frozen green peas
2-3 cloves of garlic, minced
1/2 inch piece of ginger root, peeled and grated
1 TB coconut oil
1 tsp sesame oil (optional)
sunflower orĀ sesameĀ seeds for serving

In a wok (or large skillet) heat your coconut oil over medium high heat until melted. Stir in the garlic andĀ sauteĀ 1 minute untilĀ fragrant. Stir in red pepper andĀ carrotsĀ and saute 1 minute. Add in quinoa and saute 2-3 minutes until carrots and peppers are tender and quinoa starts to stick to the sides of the pan. Add in frozen peas, ginger, and sesame oil (if using) and continue stirring until peas are warmed through 1-2 minutes longer. Serve topped with sunflower or sesame seeds (and a big mug of ginger tea if you have it!)

Quick, easy, and nutritious, it doesn’t get better than that šŸ™‚
