‘Tis the season

Hey guys! I spent yesterday fully enjoying my day off (a rare treat at the end of a busy semester) and since turkey day has officially passed it seemed like the perfect time to decorate the tree.

I even broke out the Christmas socks 🙂

Even though I had moved on to the next holiday we were still trying to clear Thanksgiving leftovers out of our fridge… we might have made just a little too much. What that really meant though was I had enough mashed potatoes to make up a few of these…

I’m a sucker for anything potato based, and these little potato pancakes are a dream. They have a thin, crispy crust around a a center of perfectly fluffy mashed potato goodness. It’s hard to top that level of goodness, but since you’re using leftovers these are also crazy easy to make.

Take at least 1/4 cup and no more than 1/2 a cup of leftover mashed potatoes and roll into a ball in your hand. Using your palms gently flatten them out to no more than a half an inch thickness.

Drop them into a hot frying pan (with a little bit of butter melted in) and let them hang out for about 5 minutes.

Carefully flip them over and cook for 5 minutes more (you can add a little more butter if your pan looks dry).

Pull them out and immediately sprinkle with salt and pepper. They are perfectly delicious at this point but a little sour cream and chopped green onion never hurt anyone 🙂

Leftover Potato Pancakes
Makes 2 pancakes, 1 serving

15 minutes

1/2 to 1 cup of leftover mashed potatoes
1 TBSP butter
salt and pepper to taste

Sour cream/green onions to garnish

Place a small frying pan on medium heat and melt a little butter into the bottom. Take a 1/4 -1/2 cup of mashed potatoes (the more potato the bigger the pancake) and roll into a ball in your hand. Carefully flatten the balls into disks (about a half an inch thick). Drop the pancakes into the hot pan, you should hear a good sizzle, let cook for about 5 minutes on the first side before you flip. They should be a nice golden brown when you flip them over. Cook for about 5 minutes on the second side (you may need to add a little more butter).

Remove from heat directly to a plate and sprinkle with salt and pepper to taste. Top with sour cream and green onions if desired (let’s be honest you know you want to).

Taste’s best if eaten in front of a newly decorated Christmas tree 🙂
